Oat Biscuits

Baking: 15-18 minutes


150 g rolled oats
130 g wholemeal flour
70 g plain flour
170 g brown sugar
50 g coarsely chopped walnuts/ almonds/ hazelnuts
175 g unsalted butter
3 tablespoons honey
3 tablespoons water
1 teaspoon vanilla extract
1 teaspoon baking soda


  1. Preheat the oven to 180°C and line two baking trays with baking paper.
  2. Melt the butter in a small saucepan.
  3. In a large bowl, mix together the flour, sugar, oats, baking soda and nuts. Make a well in the centre of dry ingredients, add the melted butter, honey, water, vanilla extract and mix until well combined.
  4. Spoon the mixture onto baking trays and shape into discs leaving about 5 cm between each, to allow spreading.

Bake for 15-18 minutes or until golden brown. Allow to cool for 5 minutes before transferring.
