150 g rolled oats
130 g wholemeal flour
70 g plain flour
170 g brown sugar
50 g coarsely chopped walnuts/ almonds/ hazelnuts
175 g unsalted butter
3 tablespoons honey
3 tablespoons water
1 teaspoon vanilla extract
1 teaspoon baking soda
- Preheat the oven to 180°C and line two baking trays with baking paper.
- Melt the butter in a small saucepan.
- In a large bowl, mix together the flour, sugar, oats, baking soda and nuts. Make a well in the centre of dry ingredients, add the melted butter, honey, water, vanilla extract and mix until well combined.
- Spoon the mixture onto baking trays and shape into discs leaving about 5 cm between each, to allow spreading.
Bake for 15-18 minutes or until golden brown. Allow to cool for 5 minutes before transferring.
